Coffee Cream Cake with pears and potatoes Anna Moroni




  • 900 gr potato
  • 500 grams of Williams pears or kaiser
  • 300 grams of flour
  • 2 tablespoons unsweetened cocoa powder (I have not made)
  • 150 grams of butter
  • 200 grams of sugar
  • 1 egg + 1 yolk
  • 1 lemon
  • Powdered sugar
  • a pinch of salt

Boil the potatoes and mash let them cool.
Clean and cut the pears into wedges and squeeze over the lemon to prevent them from black and sugar.
Mix flour, sugar, softened butter into small pieces, cocoa, potatoes (cold and the grated rind of lemon) and eggs.
If the dough is too soft, add more flour and put the dough in the fridge to rest a little.
Coat a baking sheet with parchment paper and lay half of dough, place the pears and cover with a sheet prepared with the other half of the dough.
sprinkle a little icing sugar and bake 50 minutes at 190 degrees.
